This time of the year gets so darn busy. The days fly by at a hundred miles a minute. I have begun to bake Christmas goodies and freeze them. These white chocolate peanut holiday Haystack Cookies are so beautiful, easy, delicious and they freeze well. Is your available time starting to run short? Well these little treasures only take a few minutes and aren’t they pretty?
I can not believe that Christmas is yet again right around the corner. So much to do and so little time. I feel like from Halloween on it is RUN RUDOLPH RUN!! Tons of fun but lots to do!! These little treasures can literally be prepared from start to finish in less than ten minutes. There are only four ingredients and the cost is minimal as well.
How to freeze Haystack Cookies.
These cookies can be prepared ahead of time and frozen. Once the cookies are completely set pack them in doubled Ziploc freezer bags and place them in sturdy glad-ware containers. When defrosting take them out of the containers frozen and place on serving trays or platters uncovered. Once they come to room temperature cover them with plastic wrap or store in airtight containers.
How to make no bake Haystack Cookies
Melt the chocolate in a large microwavable bowl according to bag instructions. Add peanuts and chow mein noodles. Drop by rounded spoonfuls on to wax paper. Shake on sprinkles and allow to cool for several hours before removing from the wax paper.
How to decorate Haystack Cookies for other holidays.
They sell sprinkles for virtually every holiday and occasion. I have picked them up at Michaels, Hobby Lobby and my local grocery stores. Just change out the sprinkles to fit the holiday.
- Valentines Day – hearts
- Easter – bunnies, chicks and ducks
- Memorial Day and 4th of July – red, white and blue
- Halloween – orange, black and white
- Christmas – trees and stars
- Birthday – rainbow sprinkles
- Wedding – white, gold and silver
This Haystack Cookie Recipe is easy, dependable and delicious! Happy holidays folks!! You might as well get started because it is going to be like a roller coaster ride until mid January!!

G’Morning from Texas. I have couple questions for you. I love the idea of making sweets ahead of time & freezing. Can you tell me what other sweets freeze well ?? And do you have a problem with the cookies sweating as they defrost. I love your recipes. Do you have a cookbook out ??
Thank you so much for sharing.
Have a blessed Thursday !!
Good afternoon from Missouri!! So sorry about the delay. The car needed to go in and the kids are working on their Halloween costumes for Trunk or Treat. I can not think of a cookie or bar cookie that does not freeze well….with the possible exception of meringues. All my mini cheesecakes freeze very well. You must take all the frozen goodies out of their packaging while they are still frozen. They should not be covered at all while defrosting. It is the condensation in the packaging that causes problems. Once fully defrosted you can cover or return to dried out glad-ware. I would love to write a cookbook but life is a very busy adventure …perhaps in a couple of years. So glad that you love my recipes. It makes my day to hear from sweet people like yourself.
I love to see all your recipes. I have many relatives far away that I send goodies to and I can make your recipes and send them without worries. Thank you so much.
You are most welcome!! Glad that you love my recipes!! Compliments make my day!
Will they stay fresh if I make them four days in advance and keep them in Tupperware?
Yes I think so. Please do not put them in the Tupperware when they are warm because of condensation.
Thanks!
How long can I freeze the cookies and bars? And is there anything that should not be frozen??
A couple of months is about as far as I go packaging them as airtight as possible. Package them in separate bags or freezer containers so they do pick up the taste of the different cookies. The only thing that I am aware of not freezing well would be meringues.
Perfect gift for Christmas! Thank you for the recipe! I really appreciate it. 🙂
My pleasure Sarah! I love Christmas!
Cooked or raw noodles?
They are cooked chow mein noodles. They look like this.
I’m going to try making these without cooking noodles. I make haystack with butterscotch morsels and don’t cook noodles.
You don’t cook the noodles in my recipe. La Choy Chow Mein Noodles are already cooked. That is what I was trying to get across.
Love how versatile these are across seasons – great suggestions for different decorations!
What a fun and delicious treat for the holidays! Exactly what I needed to cure my sweet tooth; can’t wait to make these again and again!

LOVE these! These were a favorite of mine growing up. I’ve also made them using melted butterscotch chips or melted peanut butter chips. So good. The crunch and saltiness of the noodles and peanuts paired with the sweetness of the candy coating…so good.

Thinking about trying using almond bark. Not sure how much 2 cups would be though
I would think it would say right on the package.
Can these go into the fridge after making to speed up process. I do it with my haystacks but wasn’t sure about this recipe. Can’t wait to try them .
★★★★★
Yes they most certainly can.
